Where does Greaves come from?

Premium Midwestern cattle sourced through relationships our family has maintained for three generations in the Chicago beef trade. We do not source through brokers or aggregators. Every batch is traceable to a specific region and processing date. Ask us for batch provenance and we will provide it.

Why is Greaves single-filtered?

Because we start with premium-grade Midwestern cattle sourced through our family’s existing beef operations. When source quality is known and controlled upstream, you need less correction downstream. Single fine filtration removes what should be removed — particulate matter — without stripping the flavor compounds and natural color that tell you something about the animal.

Why is Greaves darker than some competitors?

Two reasons. First, the animals are grass-fed, and the carotenoids from their diet carry through into the fat. Second, we do not bleach or steam-deodorize, which are the processing steps that produce the paper-white color in heavily refined tallow. Our color varies slightly between batches because the animals eat different forage in different seasons. We consider that variation information, not inconsistency.

Why does Greaves have a stronger beef flavor?

Because we did not process the flavor out of it. The volatile aromatic compounds responsible for beef flavor are removed by water-washing and steam deodorization. We do neither. If you are cooking savory applications, the beef character in Greaves gets into your food. That is the point.

Cooks who make sourcing decisions about their ingredients. People who already buy a specific olive oil, a specific butter, a specific producer’s product — not because of a label but because they have thought about what they are putting in their food and they care.

People using tallow primarily for skincare who are sensitive to scent. Bakers making delicate pastry where a pronounced beef note would be intrusive. We have no reason to pretend those customers should buy Greaves — they should buy what works for their application.

Cool, dark conditions. Shelf stable for 12 months unopened. Refrigeration extends shelf life. The fat will cloud or firm at refrigerator temperature and return to its natural appearance at room temperature — this is normal.
